How to Make an Easy Quesadilla

Let me show you how to make an easy quesadilla!

Looking for an easy lunch or dinner that only requires a few ingredients and is quick to make? Look no further. This is one of my favorite quick meals. It’s super tasty and full of fresh flavors.

Ingredients:

4 Ingredients for Veggie Fajita Quesadillas: sweet peppers , onion, cheese, and tortillas
  • 3 Sweet peppers
  • 1 onion
  • flour tortillas
  • Mexican shredded cheese
  • Olive oil (liquid and spray)

Directions:

  1. Chop sweet peppers and onions

2. Pour about 2 tablespoons of oil into the pan and cook the onions and pepper over medium heat in a pan

3. Once the peppers and onions are cooked, remove them from the heat. I aim for the onions to be translucent and browned.

4. Heat another pan (cast iron) over medium heat and spray it with olive oil spray. Place a tortilla in the pan and then sprinkle cheese first, followed by cooked onions and peppers (or leave as cheese only). Let it cook until it has browned to your liking and then use a metal spatula to fold it in half. You can also use the spatula to create cut lines in the quesadilla. I usually do fourths.

5. Serve with salsa, guacamole, and/or toppings of your choice. Enjoy!

Other easy quesadilla ideas:

You could make the quesadilla the same way as in this recipe, but just substitute the ingredients you put inside or add to them. You could try:

  • Grilled chicken cut into small strips and cheese
  • Grilled steak cut up with cheese
  • To make it really easy, you could get a rotisserie chicken and shred the chicken breasts to put in your quesadilla. You could add that to the quesadilla along with peppers, onions, and cheese for an easy chicken fajita quesadilla.
  • If you’re thinking of how to make a cheese quesadilla, you can also do a quesadilla with just cheese. Young kids often like that option and it’s very easy to make.
