How to Make Chicken Broccoli Alfredo

Looking for an easy, healthy dinner with lots of fresh ingredients? Look no further! Learn how to make chicken broccoli alfredo. It makes a great lunch or dinner and is a crowd pleaser! My family gobbled it up quick and I think yours will too, give it a try!

Chicken Broccoli Alfredo Recipe:

Ingredients:

  • 2 chicken breasts
  • Spaghetti (16 oz box)
  • One 15 oz jar of Alfredo sauce– I love Classico
  • Head of fresh broccoli
  • One onion
  • 5 cloves of garlic 
  • 5 grape tomatoes (cooked in pan)
  • Extra grape tomatoes to top it with
  • Salt
  • Garlic powder
  • Onion powder
  • Lemon- squeeze 1/4 of the lemon juice into the pan after cooking
  • Reserve extra lemon quarters for squeezing juice onto the pasta once plated

Directions:

  1. Heat water in pot to boil with a bit of salt- just sprinkle some in there 
  2. Chop the onion, broccoli, and garlic 
  3. Generously put olive oil in large pan and set on stove and heat the oil over medium heat
  4. Put the garlic in the pan and let it simmer for about a minute, before adding the onion and broccoli 
  5. At the same time, add the noodles to the pot of salted water and set the timer to the directions of the box (9-11 minutes for the spaghetti I chose)
  6. Cook the 2 chicken breast in the method of your choice, I chose to put them in the George Foreman grill (the same in I’ve had for about 15 years! Ha ha)
  7. Sprinkle liberally garlic powder and onion powder over the veggies-about 1 tablespoon of each one.
  8. Once the veggies are mostly cooked, add about 5 grape tomatoes to the pan for extra flavor and smash them if you choose or leave whole- I did a little of each
  9. Add the cooked chicken to the pan of veggies and chop into bite size pieces with the spatula 
  10. Add the Alfredo sauce 
  11. Remove the cooked noodles from the stove and drain them before adding them to the big pan and mixing it all together
  12. Serve and drizzle with more fresh squeezed lemon juice and salt to taste. Enjoy!

Getting started

Once you’ve gathered all of the ingredients for the alfredo pasta listed above, bring a pot of salted water to a boil and get some olive oil in a large pan ready for the veggies. You can heat it over medium heat, but wait to turn the oil on until your veggies are just about ready to toss them in.

Cook 2 chicken breasts.

You also need to cook your two chicken breasts at the same time. I used my George Foreman grill to cook mine, but you could do it in a separate pan, the same pan, bake them, whatever works for you.

Chop your veggies

You’ll need to finely chop your garlic cloves.

You’ll also want to chop up your broccoli and onion.

Start cooking the noodles

Add the noodles to boiling, salted water and set your timer for the amount of time on the package. For mine it was 9-11 minutes.

Cook your veggies in the olive oil

Move the vegetables around periodically in the pan and add more olive oil or adjust the heat slightly as needed. Finish them to your liking.

Add the tomatoes, chicken breasts, and seasonings to the pan

Add the grape tomatoes, garlic powder, and onion powder, salt, and cooked chopped chicken breasts. (Mine was cooked on the George Foreman grill). Mix it all in well with your spatula.

Add the Alfredo sauce

Then, add the jar of Alfredo sauce. Classico, “Roasted Garlic Alfredo” is my personal fave.

Squeeze lemon juice on top

To add even more fresh flavor, cut 1/4 slice of the lemon and after removing the seeds, squeeze the juice onto the pasta in the pan.
