Breakfast

Wondering what to cook for breakfast? Here are some breakfast ideas all in one spot to make them easy to scroll.

Hashbrowns (Waffle House copycat)

Ingredients:

  • Frozen hash browns or fresh shredded/diced potatoes
  • Diced ham
  • Slices of Cheddar Cheese
  • Onions

Directions:

  1. Cook the hash browns on the stove top, following the instructions on the package. Put some oil in the pan and brown them to your liking. Be sure they are brown on both sides.
  2. Dice the onion.
  3. In a separate pan from the hash browns, put some olive oil over medium heat and brown the onions and the diced ham until the onions have caramelized,
  4. Once the hash browns are as crispy/brown as you like them and fully cooked, plate them. Add the onion and ham mixture to the top.
  5. Last, take sliced cheese and place it on top and pop it in the microwave for about 20 seconds so that it melts over the top. Enjoy!

Omelettes

Ingredients::

  • Eggs
  • Cheese
  • Meat: I usually use diced ham
  • Onion
  • Sweet peppers
  • Cherry tomatoes
  • Jalapeños

Directions:

  1. If any of your vegetables need to be cooked ahead of time, do that. I like to brown my onions alone with my diced ham before I begin cooking the omelette.
  2. Crack open 3 eggs into a bowl and whisk them with a fork.
  3. Coat your pan with a little bit of olive oil and heat the pan over medium-high heat
  4. Pour the eggs into the pan
  5. As the eggs cook, sprinkle all of the things you want to be in your omelette onto the eggs.
  6. When the eggs are fully cooked, fold the omelette in half using a spatula, move it to your plate, and enjoy!

Quiches

  • Eggs
  • Cheese
  • Desired veggies

Bake eggs, cheese and chosen veggies in a muffin pan to make personal quiches.

Sausage Breakfast Casserole

  • 10 eggs
  • One can crescent rolls
  • Shredded cheese (to taste)

Directions:

  1. Preheat oven to 375 F.
  2. Spray casserole dish with a nonstick spray. (I use olive oil Pam)
  3. Brown the sausage over medium-high heat until brown and cooked all the way through.
  4. Open the crescent roll package and lay flat over the bottom of the casserole dish.
  5. Crack 10 eggs into a bowl and whisk them with a fork.
  6. Pour the eggs over all of the sausage.
  7. Sprinkle shredded cheese on top- to taste. I just light cover the top.
  8. Bake for 40-45 minutes.
  9. Cut into squares and serve. Enjoy!

Waffles/Pancakes

Ingredients:

  • Complete pancake mix
  • Water

Directions:

  1. Just mix water with the pancake mix to the ratio it says in the package directions.
  2. Heat up a waffle iron and put mix in per each waffle for waffles and cook until waffle iron indicates done.
  3. For pancakes, heat up a pan and spray with nonstick spray. Place a spoonful of the batter and cook until brown on first side, then flip and cook second side.
  4. Consider serving with syrup, a side of bacon or sausage, and a fruit if you your choice. Enjoy!

*This is a very processed option and obviously not the healthiest choice, but it’s a fast and easy breakfast option.
