How to Make Delicious Southern Homemade Biscuits

I grew up in the South and ever since I can remember, my mama and grandparents have made biscuits from scratch. It took me way longer than it should have to make them a staple around here, but my mama kept on me to make biscuits regularly for my babies. There’s something about fresh, warm southern homemade biscuits that is just comforting. They make a wonderful quick snack and a great addition to just about any meal. 

Here are a couple of biscuits with my antique four canister behind them, which I love! It was a gift from my mama years ago and it is part of a set.

White Lily Flour is the key!

As my mama was teaching me to make them, she told me what my Granny said was a must when making biscuits, and that is White Lily self-rising flour. It’s simply the best. If you have been trying to make biscuits with another flour and they haven’t turned out quite right, that could be why. 

A couple of delicious Southern homemade biscuits

Tools You’ll need:

  • Pan
  • Something round to cut biscuits – I use the blue cookie cutter in the picture below, but you can use an old drinking glass or the lid to your Pam spray if you don’t have that
  • a 1 cup measuring cup for the flour
  • a glass measuring cup to melt the butter and measure the oil and milk
  • a mixing bowl
  • spoon to stir it up
  • butter knife to cut the butter
  • Wax paper or a cutting board to flour and spread out the dough for cutting the biscuits

As far as the recipe goes, it’s right there on the bag, but this is my rendition. (Scroll down for the printable recipe card).

How to make Southern homemade biscuits:

First, I preheat the oven to 475 degrees.

I like to use stick butter and cut off at the two tablespoons mark on the wrapper to make measuring easy. Using the microwave, I warm it for about 40 seconds, or until melted. 

Next, I use 2/3 cup of milk and 1/4 cup of canola oil.

Then, I use 2 cups of white Lily flour- packed.

The dough

I mix all of that up in a bowl by hand using a spoon. To press out my dough, I prepare a lightly floured surface either on a cutting board or wax paper. Finally, I dump the dough out and mix it the rest of the way with my hands. I just sort of make sure all of the ingredients are mixed together well. 

Next, I like to fold it in from each side- left, right, top, and bottom.

At that point, it’s ready to smash out. I sort of just push on it to flatten it with my hands. Not too thin, not too thick- maybe 1/3 inch?

Cutting out the biscuits

Next, I cut the biscuits. I use a round plastic cookie cutter and it works great. Before I had that, I used the top of a can of Pam spray. You can improvise, if needed, with what you have as long as it’s about the size you want your biscuits to be. Using my round cookie cutter, I usually get about 14 biscuits. 

I spray a pan with olive oil Pam spray and cut and place the biscuits onto the pan. 

Once I can cut no more- I just ball the dough up and then flatten it out again. Then I cut more, until I’ve used all of the dough. If I have scraps, I ball those up and make “baby biscuits.” That’s what my mama always called the small biscuits made from the scraps when I was growing up. They were my favorite! 

Pop them in the oven

Then, I put the biscuits in the oven and cook them for usually 12-13 minutes before I check on them. I usually end up adding another 2-3 minutes if they aren’t brown enough. 

For reference, I think the bag says 8-10 minutes cooking time, but I have found it takes more like 12-13 minutes to achieve light golden brown biscuits in some ovens and only 8 minutes in other ovens. This can vary so I recommend watching them after that 8 minute mark for best results.

Ingredients

  • 2 cups of White Lily self-rising flour, packed
  • 1/4 cup of Canola oil
  • 2/3 cup of milk
  • 2 Tbsp melted butter

Instructions

  1. Preheat oven to 475 degrees and spray a pan with oil and set aside.
  2. Measure 2 tablespoons of butter and melt in the microwave.
  3. Measure 2 cups of White Lily self-rising flour- packed and add to mixing bowl with the melted butter.
  4. Add 2/3 cup of milk to the bowl.
  5. Add 1/4 cup of oil (I use Canola oil) to the bowl.
  6. Stir the ingredients together until a dough forms.
  7. Lightly flour a clean surface, such as a cutting board or a sheet of waxed paper on the counter and lightly flour your hands.
  8. Place the dough on the surface and fold it in from all sides and press it out using your hands or a roller.
  9. Use a round cutter to cut biscuits from the dough and place them on the pan.
  10. Bake at 475 for 8-12 minutes depending on your oven and how brown you want them. Enjoy!

Notes

The cook time can vary depending on your oven and how golden or light you prefer your biscuits. I recommend timing them for 8 minutes and then adding time as you see fit a minute or so at the time.
